ParWill Swill is a fruit wine making business that began under a plum tree at the end of a very good New Year's Eve party to celebrate the coming of 1997. Two friends, Michael Parry and Jeff Williams, had been drinking home brew beer and gazing up at the plums when they decided to have a go at wine making.
Two days later Michael arrived with two shopping bags full of plums, a garbage bin, and a recipe book, and by the end of the night our first batch of fruit wine was underway. We tasted it two weeks later and could not believe how good and smooth it was. By the end of that summer we had made another two batches using different varieties of plums and trying to achieve different styles of wine.
Before long word had “got out” about their new hobby, and they had their first customer.
The next year came and went along with the expansion of their hobby, and many weird and wonderful experimental wine batches. They had many failures and some successes, and came to realise that the fruit they were using was ideally suited to making a sweet dessert style wine, and for the first time they thought about the possibility of turning their hobby into a small business. ParWill Swill was borne!
The years have flown by since that first batch of wine, with the construction of a new, state of the art winery building, as well as Michael’s wife Cheryl coming on board as the sales & marketing manager – helping to grow the business to the point where ParWill Swill currently make four varieties of dessert style fruit wine (with two more in development), and have over 70 outlets in Australia to sell them through.
Each step along the path to the creation of a successful winemaking venture has been both exciting and educational. The encouragement we have had from our family, our friends, and our growing number of supporters has been fantastic from the very beginning and is a constant source of reassurance. ParWill Swill couldn't have had a much more humble beginning.
A bright and rewarding future now beckons as the company heads towards the fulfillment of its goal of becoming the leading Australian fruit wine manufacturers for domestic, export and on-line markets.
